Cream of Wild Rice Soup

Ingredients
  • 1 large onion chopped                      
  • 1/2 cup flour
  • 1 large carrot, shredded                   
  • 8 cups chicken broth
  • 1 rib celery, chopped                         
  • 3 cups cooked wild rice
  • 1/4 cup margarine                              
  • salt & pepper to taste
  • 1 cup cooked chicken breast, shredded
  • 1 can fat free evaporated milk (or skim milk)

 

Directions
  1. In large saucepan, saute onion, carrots and celery in butter until tender.
  2. Stir in flour until blended.
  3. Gradually add broth.
  4. Stir in rice, chicken, salt and pepper.
  5. Bring to a boil over medium heat.
  6. Cook and stir 2 minutes or until thickened.
  7. Stir in milk and cook 3-5 minutes longer.
