Rice Tip
Add a few drops of lemon juice to your water to help keep grains from sticking to each other.

| Ingredients |

1 large
onion chopped

1/2
cup flour
-
1 large carrot, shredded
-
8 cups chicken broth
-
1 rib celery, chopped
-
3 cups cooked wild
rice
-
1/4
cup margarine
-
salt
& pepper to taste
-
1 cup cooked chicken breast, shredded
-
1 can fat free
evaporated milk (or skim milk)

| Directions |

In large saucepan, saute
onion, carrots and celery in butter until tender.

Stir in flour until blended.

Gradually add broth.
-
Stir in rice, chicken, salt and pepper.

Bring to a boil
over medium heat.

Cook and stir 2 minutes or until thickened.

Stir in milk and
cook 3-5 minutes longer.
