Rice Tip
Add a few drops of lemon juice to your water to help keep grains from sticking to each other.

| Ingredients |

1/2 cup rice
-
1 cup chicken
broth
-
1 1/2 lb.
ground chicken
-
1 tsp. lemon
juice
-
1/2 tsp. celery salt
-
3 cups
fine bread crumbs
-
2 eggs,
beaten
-
1 Tbsp. water

| Directions |

Cook rice in broth on simmer until liquid is absorbed. Cool
-
Combine chicken lemon juice, and celery salt
with cooled rice.

Shape into balls or patties.
-
Mix eggs and water together.
-
Dip
ball/patties into egg mixture, then into bread crumbs.
-
For balls, fry in olive
oil for 3-4 minutes then bake at 375 degrees for 15 minutes.
-
For patties, fry
on low heat for 10-12 minutes, until no longer pink.
These are great served
with gravy or as chicken sandwichesl
