Rice Tip

Add a few drops of lemon juice to your water to help keep grains from sticking to each other.

Chicken Croquettes

Ingredients
  • 1/2 cup rice                                
  • 1 cup chicken broth
  • 1 1/2 lb. ground chicken               
  • 1 tsp. lemon juice
  • 1/2 tsp. celery salt
  • 3 cups fine bread crumbs             
  • 2 eggs, beaten
  • 1 Tbsp. water

 

Directions
  1. Cook rice in broth on simmer until liquid is absorbed. Cool
  2. Combine chicken lemon juice, and celery salt with cooled rice.
  3. Shape into balls or patties.
  4. Mix eggs and water together.
  5. Dip ball/patties into egg mixture, then into bread crumbs.
  6. For balls, fry in olive oil for 3-4 minutes then bake at 375 degrees for 15 minutes.
  7. For patties, fry on low heat for 10-12 minutes, until no longer pink.
These are great served with gravy or as chicken sandwichesl
