Easy Chicken and Rice Soup

Ingredients
  • 1 pkg, long grain & wild rice mix - (quick cooking)
  • 5 cups water
  • 1 lb. ground chicken
  • 1/3 cup seasoned bread crumbs
  • Dash of celery salt, salt and pepper
  • 1 12 oz. can evaporated milk, chilled 2 Tbsp. flour

 

Directions
  1. Mix chicken, crumbs, celery salt, salt and pepper.
  2. Shape into small meatballs and cook over low heat until no longer pink,
  3. In a large sauce pan, combine rice and water.
  4. Bring to a boil, reduce heat, cover and simmer 5 minutes.
  5. Combine chilled milk and flour until well blended.
  6. Add to hot rice mixture, stir until slightly thickened.
  7. Add meatballs, stir and cook 1 minute more.
