HIMALAYAN RED RICE

Carnaroli rice grows nearly twice as tall as either Arborio or Vialone Nano, making it extremely difficult to harvest (it must be harvested as soon as it matures, before the large grain falls over from its own weight!). Why does owner Gabriele Ferron go to all the trouble to produce carnaroli? First, because this rice plumps to three times its size when cooked, absorbing a staggering amount of liquid along the way. The resulting texture is creamy, yet still al dente. Second, carnaroli is as white as snow, resulting in a dazzlingly beautiful plate of risotto. Call him vain, but that's why A.G. Ferrari Foods chef Gianluca Guglielmi uses carnaroli almost exclusively. The large, long grain also makes it an exceptional choice for rice salad.
  • The Pila Vecia label represents the top 10% of Gabriele Ferron's rice harvest (the best of the best!).
  • ORGANIC CARNAROLI  RICE

  • With its rich soil, its strong sun, and its never ending "Mistral" wind , Camargue, an area of Provence, was bound to become a rice land. King Henri the fourth ordered to grow rice in Camargue in 1593. Rice-growing fileds really expanded in the region after the second world war. It now produces this very famous and tasty red rice that gourmets appreciate. Cooking time: 18 to 25 minutes.

    • Gli Aironi's Carnaroli Rice is grown in Risaie Vercellesi in the Po Valley, a region considered by many to be ideal for the production of Italian rice. The Perinotti family has lived and harvested rice in this region for five generations. Their method of stone craft husking guarantees a light shelling of the grain, thus keeping the nutrients intact on the external part, which is essential to the texture and taste of rice after cooking.
    • Aironi Carnaroli Rice maintains distinct grains, with the gradual addition of hot broth, to create the perfect rich and creamy risotto that is still al dente.
    • Each package contains 2.2 pounds of vacuum packed Gli Aironi Carnaroli Long Grain Italian Rice from Italy.
